Mom's Homemade Potato Salad

Servings: 1 large batch

(party size, cut recipe in half for smaller amount)

Ingredients:

2- 3 lb. Bags Red Potatoes

1 Whole Stalk Celery

1 Dozen White Eggs

2 - Small Red Onions

Salt, Pepper, Garlic Salt

1 Tsp. Fresh Chopped Parsley or Dry

1 Qt. Mayonaise

2 Tbsp. Mustard

10 Oz. Vlasic Sweet Relish


Directions:

Boil the potatoes until you can easily insert a fork, approximatly 30 minutes. Also boil your eggs, with a couple Tbsp. of salt, bring them to a rapid boil, reduce the heat to low for 10 minutes, remove from heat, pour out the hot water, add cold water and let them cool. Meanwhile, finely chop the celery and onion. When the potatoes are done, quarter and chop them, add to a big bowl. Peel the eggs and place in an egg slicer, slice one way and turn the egg opposite direction and slice again. Add to the bowl along with the onion and celery. Season to taste, sprinkle the salt, pepper & garlic salt on each layer you add ingredients to. Add the mayonnaise, mustard, relish and parsley, mix well.
